With distinctive dishes
October 30, 2026The Delicacy House of the Okryu Restaurant, which stands crowned with the Korean-style gabled roof beside the restaurant famous for the Pyongyang cold noodles, on the banks of the picturesque Taedong River is always crowded with customers.
It serves diverse and distinctive dishes made of sturgeon, terrapin, quail, eel and salmon.
According to manager Ri Sun Hyong, sturgeon steamed in soy sauce is the most popular of many dishes.
Ra Chol Bok, a regular customer of the house, said that he visited it to savour foods made of sturgeon and gave the thumbs-up sign, saying that sturgeon steamed in soy sauce is really unique.
To prepare the food, the cooks take off the integument of the fish, clean it and keep it in spices including salt, Welsh onion and ginger, for twenty minutes before steaming it in an oven. And then they appropriately pour warm oil sauce flavoured with Welsh onion over it and garnish it with coriander before it is served. It is an haute cuisine with the unique mixed flavour of soy sauce and coriander penetrating into the white tender flesh.
Cook Pae Kil Nam said that a secret of the recipe is to keep the standard time in steaming sturgeons, adding the time should be strictly observed as the flesh gets tough and tastes bad if it is overdone even a bit.
Terrapin dishes known as nourishing foods are also favoured by customers.
Terrapin soup, terrapin sashimi, terrapin porridge, liquor made of terrapin blood, terrapin tea and so on are good for invigorating the body for the remarkable medicinal virtues.
Terrapin blood liquor is particularly efficacious for improving nutrition and preventing cold.
Quail and eel dishes are also popular among the customers.
The house serves roast quail, fried quail and quail meatball soup.
“Fried quails crispy to the bone are so tasty. I have fried quails at home, but they are not as good as those done by the cooks here. Today, all my family members want to eat quail dishes here,” said Kim Mi Rae, a woman living in Kaeson-dong of Moranbong District, Pyongyang.
The house satisfies customers by serving well-done Western foods.
The manager said that everyone can have all the haute cuisines of the house and that all its employees are striving to make the benefits of the socialist policy for the people entirely reach them.
